Christmas Dinner - Prime Rib, Balsamic Onions and Sweet Potato Balls

This is what Ill be preparing for Christmas dinner this year! I have never done Prime Rib before, but I got this menu from my bestie, Starr. She makes it evere year and this year, I just cannot resist!

Prime Rib:

5 garlic cloves (smashed)
1/4 cup horseradish
leaves from 2 fresh rosemary sprigs
leaves from 4 fresh thyme srigs
1/2 cup kosher salt
1/4 cup ground pepper (do not use regular table pepper, it will be way too spicy)
1/2 cup extra virgin olive oil

These ingredients are only if you want to make an aus jus sauce:
1/2 cup dry white wine
1 Tbsp. flour
2 cups chicken broth

Preheat oven 350 degrees, put the meat in a pan bone side down. In a small bowl make a paste with the top 7 ingredients. Generously massage this paste over roast. Put in oven until meat ther. reaches 125. About 1 1/2-2hours. Remove beef and let stand for 20 min. before cutting.

For sauce: add white wine and bring to a simmer scraping bits, reduce wine by half, whisk in flour, then brothm, cook till thick, about 10 min.

Balsamic Onions:


6 Tbsp. butter
3 Tbsp. balsamic vinegar
1/2 cup honey
1/2 bunch fresh thyme
dash of salt & pepper
4 red onions (cut in half)

Combine ingredients in a small sauce over medium heat. Bring to a boil for one minute. Place onions, cut sides up, drizzle mixture and bake for 45 minutes at 350.

Sweet Potato Balls:
To get this exact recipe you might want to go on to foodnetwork.com and look under Paula Dean' s Sweet Potato Balls. She didn't have pecans in her recipe. I added those.

4 sweet potatoes or 2 cans of sweet potatoes
cinnamon
1 Tbsp. orange juice
1/2 cup brown sugar
pecans (chopped)
large marshmallows
1 cup coconut

Mash sweet potatoes in a large bowl and add about a tsp. or more of cinnamon, orange juice, brown sugar. Form a ball about 2 inches around a large marshmallow. Roll the ball in a mixture of coconut, about 1/2 tsp. of cinnamon, and pecans. Bake at 350 for about 15 minutes. Watch carefully so that the marshmallow doesn't explode.
